Back at Mom’s to feed the cats. Hungry too.
It’s 10am and I worked last night at the bar. Ready to eat like a queen**. There’s not much here (what’s new), but just a few ingredients and a royal meal is made. One plus side of Mom’s — she lives down the road from an organic farm. MMM. They always have eggs in the house, and these were laid a few miles away! I’m having 3. I’m working all day and will be on my feet. There areeee healthy options at the bar and I’ll choose them if I start off with a good morning. Besides, F*%& not eating. Three eggs have approximately 70 calories each. 210 calories @ loads of protein to keep me full + amino acids for brain power. Compared to two pieces of toast at 100 calories each? I’d be starving again in 3.5 seconds – and looking for more carbs.
For veggies, I found some (wilty but rescuable!) scallions and half a white onion wrapped in plastic. I recently read that some onions have a tendency to create belly bloat (and gas), so I kept the white onion in the fridge and stuck with just the scallions. I cut off the bottoms, and the tops, and kept the fresh middle greens. Sliced thinly, I threw them into the eggs.
I cook on a cast iron skillet. No coconut oil in reach but Mom swears by grapeseed oil for cooking so I used a tablespoon to coat the pan. And that’s it. Cook to your liking (fluffy but on the well side, for me). Sprinkle with black pepper to taste and share the plate with some spicy sriracha sauce – gets the metabolism up and revving.

**king, prince, pauper theory: Eat breakfast like a king, lunch like a prince, dinner like a pauper. I try to follow this, especially when I am working late. I wake up hungry and its AWESOME. Most calories are consumed in the morning… so I’m not digesting all day long either. Girly perk: flatter tum.
